
What happens when you're hungry for a quick healthy snack and you're determined to make a recipe from Veganomicon? You improvise and throw together what you have around the house!
Initially thought I had the ingredients for this White Bean Aioli... instead I had a lot of similar ingredients. Butter beans filled in for navy beans, canola for olive oil. Then the minced garlic got combined in the food processor before roasting it. The result? A creamy, garlicky dip that was still a crowd pleaser.
