Sushi Salad

I'm only posting this as inspiration for an upcoming dinner. I went to Purdue for the day with Molly, and had this awesome sushi salad. Best idea ever!

"Layers of fresh ingredients over seasoned sushi rice" was the menu description... but it was so much more than that. Slivered cucumbers, carrots, avocados, shitake mushrooms, marinated tofu, and seaweed flakes. Then it was topped off with Sriracha. Delicious!

There is definitely a sushi salad dinner party in the near future.
