Mexican Potluck

I'm still pretty useless in the kitchen with my right arm in a cast. So for my "little sister" Kaylee visiting from Florida, we threw together a mexican potluck. The perfect way to spend an evening with friends.

We made mango salsa, which is one of the easiest and most delicious things ever. Then we served edamame tacos, tofu tacos, and Match Meat faux ground beef tacos. Ann Arbor Tortilla Factory corn tortillas and lime tortilla chips completed the meal. Something for everyone!
